The typical cuisine of Gallura: meat, honey, and much more

Land-based gastronomy is undoubtedly the reigning culinary style in this area. Pork and beef are the main meats, and of course, “porcetto” (suckling pig) plays a starring role, as it does throughout Sardinia. Sheep and lamb are also cooked, either roasted or stewed.

The quintessential typical dish is Zuppa Gallurese, a sort of lasagna made with bread, cow's milk cheese and pecorino, and meat broth (mutton and beef). A very tasty “poor man's” dish that we recommend you try. It is also known as “super cool“.

Among the first courses, also typical of this area are the Orecchiette, gnocchetti more closed than the classic ones Gnocchetti sardi which are seasoned with rich wild boar or sausage sauces.

Perhaps you know that Tempio is also known for its Carnival, so typical sweets are also prepared: the anchovies (fried pasta twists coated in honey and orange zest), the’Grooming (fried violet pasta, drizzled with honey and covered in sugar) and the Long frizzles The long fritters.

Even sweet ravioli, the Gelli-mended pullets, are one of the culinary specialities of Northern Sardinia. They are prepared with a filling of fresh cheese or ricotta, lemon and cinnamon sugar, and are served with a savoury sauce.

Difficult to find but very good, the Fried Dough, formerly used for reusing the cream formed by boiling milk. Its uses are varied: you can find it as a starter, as a main course, or as a dessert. It is a very old humble dish.
